Shrimp Burgers with Chipotle Cream
A rich and creamy soup with roasted poblanos, tender chicken, and melted Monterey Jack cheese that tastes like chile relleno.
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 2 poblano peppers, roasted, peeled, seeded, and chopped. 4 cups chicken broth. 1 cup heavy cream. 1 cup shredded Monterey Jack cheese. 1/2 cup diced onion. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. Fresh cilantro, for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the garlic and onion dices and saut until the onions are clear. Cumin, chili powder, salt, and pepper should be added along with the diced chicken breast. The chicken is done when it's no longer pink. Roast the poblano peppers and add them to the pot. Bring it to a low boil, then cook for 10 to 15 minutes. Add heavy cream and shredded Monterey Jack cheese and stir until the cheese melts and the soup is hot all the way through. Check the seasoning and make changes if needed. Serve hot with fresh cilantro on top.
