Ingredients: 2 cans chickpeas, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup finely chopped cilantro. 2 cloves garlic, minced. 1 tablespoon Thai red curry paste. 1 tablespoon soy sauce. 1 tablespoon lime juice. 1/4 cup peanut butter. 2 tablespoons coconut milk. 1 tablespoon maple syrup. 1 teaspoon sriracha sauce. Salt and pepper to taste. 4 burger buns. Lettuce, tomato, and cucumber for serving.
Instructions: Pulse the chickpeas in a food processor until they are broken up into large pieces. Put the chopped chickpeas in a bowl for mixing. Put in the garlic, cilantro, bread crumbs, Thai red curry paste, soy sauce, and lime juice. Combine well by mixing. Put the mixture in the fridge for 30 minutes after making 4 patties out of it. Mix peanut butter, coconut milk, maple syrup, sriracha sauce, salt, and pepper in a small bowl with a whisk. This makes the peanut sauce. Set a grill or a pan on medium heat. Fry the patties for four to five minutes on each side, or until they turn golden brown. Make the burger buns a little toasty. There should be a lot of peanut sauce on each bun. Fill each bun with a chickpea patty. Then, add lettuce, tomato, and cucumber on top of each one. Serve right away and enjoy!
