I just learned about this recently from a Viking reenactor! Indigo dye isn't blue until it oxidizes, so when you dye with indigo your cloth or thread doesn't come out of the water blue, it comes out and then reacts with the oxygen in the air and seems to spontaneously turn blue in front of your eyes. It's a really cool process to witness.

Actually, this process is called subtractive dyeing. See, white light is made up of the three primary colors red, blue, and yellow. This person is currently wringing all the yellow out of the silk, leaving only the blue behind. The vat underneath is where the yellow is saved for later use. You can see the next vat over where they already wrang the red out in a previous step.
