Ingredients: 1 tri-tip steak about 2-3 pounds. 1/4 cup kosher salt. 1/4 cup black pepper. 2 tablespoons garlic powder. 2 tablespoons onion powder. 1 tablespoon smoked paprika. 1 teaspoon cayenne pepper. Wood chips hickory or mesquite, soaked in water for 30 minutes.
Instructions: Preheat your smoker to 225F 107C. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper to create a rub. Pat the tri-tip steak dry with paper towels, then generously rub the spice mixture all over the steak, covering all sides. Place the soaked wood chips in the smoker box or directly on the charcoal for added flavor. Once the smoker is ready, place the seasoned tri-tip on the grill grates and close the lid. Smoke the tri-tip for about 2-3 hours, or until the internal temperature reaches your desired level of doneness 135F/57C for medium-rare. Remove the smoked tri-tip from the smoker and let it rest for 10-15 minutes before slicing. Slice the tri-tip against the grain and serve.
