Grad school is kicking my butt this semester! I’ve been stressed and super busy lately that I’ve sorta fallen off low carb. It’s a new month so I’m going to start fresh! Hoping to post new recipes soon! :)

I'm all about friend chicken and mash potatoes! This recipe is simple, healthy, and easy to make! Ingredients for fried chicken 1. Chicken drumsticks 2. 1 cup crushed pork rinds 3. 1/2 cup of Parmesan cheese 4. 2 eggs Ingredients for cauliflower mashed potatoes 1. 3-4tbs almond milk 2. 1 cauliflower head 3. 2tbs sour cream 4. 2tbs butter To make chicken: Crush pork rinds In a medium bowl and set aside. In another bowl, lightly beat Parmesan and eggs. Take chicken and dip into the egg mixture then coat chicken in the pork rinds. Bake chicken for 35-40 minutes. I like to boil my chicken first before baking in the oven. If you like to do this as well, then I suggest baking chicken for 25 minutes. To make cauliflower mashed potatoes: Boil cauliflower for 10-15 minutes or until tender. Place cauliflower in a food processor, along with the rest of the ingredients. Blend and serve! Enjoy!

Well first off, your food looks AMAZING!!! Anywho, instead of scrolling forever and filling up ur feed with likes, i jyst wanted to ask if you try to keep to certain number of carbs. I want to start keto, and the general consensus seems 20 a day... But that seems so low :(
Thank you!! :) When I first started low carb/keto, I limited myself to at least 30 carbs. I didn't want to fully deprive myself and slip up. I still was able to lose a good amount a weight at that count! After a while when I felt comfortable, I dropped down to 20-25 a day. There's a lot of amazing recipes you can eat that have basiclly no carbs and are very filling.
Spinach Zucchini Poppers
I love spinach, I love zucchini, and I LOVE chicken! So why not combine all three together?!!
Ingredients
1Ib ground chicken
2 cups grated zucchini (leave peel on)
2-3 green or red onions sliced
1/2 cup chopped spinach
1 garlic clove chopped
salt and pepper for taste
Preheat oven to 400. Mix all ingredients together to blend well. (I personally like to mix all ingredients in my food processor to get an even blend). Drizzle some olive oil onto a baking sheet. Scoop chicken balls using a measuring TBS or a spoon and place onto baking sheet. Bake chicken poppers for 20-25 minutes or until brown. Another fun option is to add some parmesan to the mixture for an extra kick! These yummy poppers are great to dip in guacamole or salsa. Enjoy!!
Chocolate Muffins
So I just recently got a new job which requires me to work mornings. Working the morning shift makes it hard for me to prepare a proper healthy breakfast!! I needed something that I could grab in the mornings and go, and still feel full throughout the mornings. These cupcakes are amazing and can be easily paired with some green tea and some fruit.
Ingredients
2/3 cup coconut flour
1 cup sweetener
1/2 cup heavy cream
2tbs coco powder
6 eggs
Preheat the oven to 350. In a large bowl whisk eggs, coco, cream, and sweetener. Next whisk in flour and let the batter sit for 5 minutes. Pour mixture into cup cake tins and bake for 20-24 minutes, or until brown. These are definitely delicious grab and go muffins for the week! Enjoy!!

Hey everyone! The holidays were such a blast! I definitely didn’t want it to end. Only downside about the holidays is giving into all those delicious treatsssss! Now that the holidays are over, it’s time to get back to healthy eating. And I’m excited because I have a ton of new recipes I’m just dying to try out!
Now I’m a sucker for sweet and spicy, and of course, chicken wings! So why not combine them together? I found this awesome recipe for chicken wings using Sriracha sauce. I’ll confess, I’m kind of a Sriracha virgin. What!? I know!! How I managed to go this long without tasting this amazing sauce is unbelievable. But anyways, with this recipe and my own touch, I managed to make something delicious that I hope you enjoy!! *makes about 8-9 chicken wings*
Crockpot Spicy Buffalo Sriracha Chicken Wings
Seasonings: (add as much to your preference) 1. 1tsp salt 2 1tbs black pepper
Ingredients: 1. 1/2 cup of Sriracha 2. 1/2 cup red hot buffalo wing sauce 3. 2tbs unsalted butter 4. Juice of lemon (optional, this makes it sweeter) 5. 1/2 cup onion 6. 2tsp of chopped garlic 7. Chicken Party wings 8. 1 cup of mozzarella
Mix all ingredients besides mozzarella in crockpot. Add the chicken in last, and cook on low for 6 hours. Turn crockpot off and let chicken simmer for about 20-30 mins. This is important because if you try to take the chicken out right away it will fall apart. Next, place chicken on nonstick pan and pour half of the remaining sauce in the crockpot on top of the chicken. Next sprinkle cheese on top of the chicken, and cover it with the remaining mixture. Bake chicken on broil heat for 5 minutes tops!! I like to sprinkle parsley on top of the chicken after taking it out of the oven. Mmmmm mmmm good! Enjoy!!
