The beef mixture
⢠ā 2 lbs ground beef 85% or 90% lean
⢠ā 2 large eggs
⢠ā 1 cup almond flour
⢠ā 3 garlic cloves minced
⢠ā ½ medium onion diced
⢠ā 1 ½ tsp salt
⢠ā ½ tsp black pepper
⢠ā 1 ½ tsp Italian seasoning
Meatloaf Sauce Ingredients
⢠ā 1/2 cup sugar-free ketchup
⢠ā 2 tbsp olive oil
⢠ā 2 tbsp mustard
⢠ā 2 tbsp Worcestershire sauce
⢠ā 2 tsp brown sugar replacement
⢠ā 2 tsp vinegar
INSTRUCTIONS
1. ā Preheat the oven to 350°F/180°C. Line a 9Ć5 inch loaf pan with parchment paper or foil. Set aside.
2. ā Mix all the meatloaf ingredients in a large bowl using your hands.
3. ā Transfer the mixture to the prepared loaf pan. Bake for 30 minutes.
4. ā Make the meatloaf sauce: Whisk all the ingredients for the baking sauce in a medium bowl.
5. ā Remove the meatloaf from the oven and spread the meatloaf sauce. Bake for 30 more minutes or until the internal temperature reaches 160F.
6. ā Rest for 5-10 minutes before slicing.
7. ā Serve the meatloaf cauliflower mash, keto gravy, and roasted green beans. You can also drizzle with the baking juices from the pan.
