Hey!! I stumbled upon your post about UC, and, my girlfriend is just going through the very same thing with a diagnosis of a severe UC for over a year now.. I'm so sorry your girlfriend is going through such an awful time. What I can say there is a light at the end of the tunnel. For me it was taking a very strong probiotic that targeted the colon. It literally changed my 6 year long severe UC into remission in 3 days. Does that mean it'll work for everyone? Not necessarily- everyone is different. But what I'm trying to say is not everything her doctor will suggest will be the answer. There's also pills now that are on the market to help with UC. I've been diagnosed for almost 10 years now, and medication for it has gone a LONG way. There's options out there, but it's okay to try home remedies as well.
As for advice, if she hasn't already get medical emergency cards from her doctor. Docs are going to say 'avoid stressful situations' because stress is the trigger for UC, but we all know that's impossible. The medical card will inform spaces with private bathrooms that, by law, have to allow her to use it.
Healthline also has an IBD app that connects people with UC and IBS in a informative, community kind of way. I totally recommend it to have her feel she isn't alone and to help with specific advice. It's also okay to call off work/school when flares are really bad, and if it's option down the line to work from home so she's always near the restroom.
Because all in all it boils down to having her be as comfortable as possible. Severe UC is tough, so please make sure she's taking Slow Release Iron, Vitamin D, and drinking plenty of water on top of her medication. The disease relies on how well you're taking care of your body, so those additional meds are a must. Try out different remedies like I mentioned before too, but also let her know it's okay to tell people about her disease. For the longest time I held shame, but in recent years I've been more open about it and it's made me feel better about myself and my situation. People call me IBS Warrior now, and while it's a meme, it does feel pretty empowering not gonna lie.

Accessible bathrooms are more than just “a big stall”
There are a lot of disabled people. And a lot of disabilities. Therefore, there are a lot of ways to make a bathroom accessible.
An actually accessible bathroom would have:
A large amount of space that can accommodate mobility aids, medical equipment, a personal care assistant, and/or a service animal.
Sturdy grab bars around the toilet.
An emergency pulls string that calls EMS if a disabled person has fallen and injured themselves (this is common in the UK).
An adult changing table.
A trash can for medical-related waste, such as catheters, -ostomy bags, etc.
A safe sharps-disposal bin.
Floors that aren’t slippery.
And tbh, there’s probably more things that can be made accessible. But those are the bare minimum.
