Ingredients: 1 lb ground beef. 4 cups beef broth. 1 can diced tomatoes. 1 cup diced carrots. 1 cup diced celery. 1 cup diced potatoes. 1/2 cup diced onion. 2 cloves garlic, minced. 1 tsp dried thyme. 1 tsp dried oregano. Salt and pepper to taste.
Instructions: In a skillet, brown the ground beef until fully cooked; drain excess fat. Transfer the cooked beef to a slow cooker. Add beef broth, diced tomatoes, carrots, celery, potatoes, onion, garlic, thyme, oregano, salt, and pepper to the slow cooker. Stir well to combine all ingredients. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender. Taste and adjust seasoning if necessary before serving.
