This has possibilities. Mostly I'm just imagining Astarion complaining about the barren wasteland and horrifying giant bugs, but I can see the Fallout crew being fascinated by the magic and the different races and everything too.
My fourth protagonist in Baldur's Gate III, Viran, is a monk from Tun'areth, the Gith capital built upon the remains of The One in the Void. Being from Tu'narath is something you can share with Glut when he asks about your memories of home, and you can share yours with him; interestingly, this should mean that the Gith protagonist already killed a mindflayer in order to leave his/her/their creche, something that Lae'zel is still pursuing based on the dialogue she has with Gale.
Little things I noticed; the Gith protagonist immediately recognizes where they are when looking outside the gaping hole into Avernus during the prologue, there are lines referring to ghaik from the narrator that crop up here and now, and the Gith will always know that Us is an intellect devourer.
Killing Us isn't something that I think would necessarily be done by the protagonist. As Lae'zel herself says, Us could be of use. And as one of Lae'zel's Endings say, a good Githyanki does not dispose of a weapon that can still be of use.

Viran (and Us) meeting Lae'zel and interacting together during the narrative should be a bit more nuanced in-game. One of the flaws of the Githyanki experience is that, in an attempt to avoid much divergent dialogue, you're treated a bit too much like an amnesic Video Game Character (TM) rather than a more seasoned Githyanki who lives in the capital of Githyanki society.
Some of the scenes also necessitate not having Lae'zel around in order for the unique moments to activate.
Viran initially decides to abandon Shadowheart due to how it looks like trying to free her looks to be an impossible task, but inevitably he locates the "key" to her holding pod during the attempt to find the helm for the ship.
The option to play as a Gith was inspired by a recommendation from @chosenofyffre given the amusement of a Gith protagonist being the one to encounter Shadowheart.
Shadowheart's unique reactions to a Gith is very entertaining.
Us, Lae'zel, Shadowheart, and Viran reach the helm of the Nautiloid, and they fight their way through their mutual friction and the infernal invaders.
The power of the monk proves too much for Commander Zhalk.
The little ghaik, Us, deals the killing blow to the indignant Mind Flayer. This moment solidifies the tie between the little ghaik and the monk.
