Ingredients: 1 lb ground chicken. 1 tablespoon sesame oil. 2 cloves garlic, minced. 1 small onion, finely chopped. 1/4 cup hoisin sauce. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon ginger, minced. 1 8 oz can water chestnuts, drained and finely chopped. 2 green onions, thinly sliced. 1 head iceberg lettuce, leaves separated. Salt and pepper to taste. Optional: Sriracha sauce, for serving. Optional: Chopped peanuts and cilantro for garnish.
Instructions: Heat sesame oil in a large skillet over medium heat. Add minced garlic, chopped onion, and minced ginger. Cook until fragrant. Add ground chicken and cook until browned, breaking it apart with a spatula. Stir in hoisin sauce, soy sauce, and rice vinegar. Cook for another 2-3 minutes. Add water chestnuts and green onions. Stir to combine. Season with salt and pepper to taste. To serve, spoon chicken mixture into lettuce leaves. Garnish with chopped peanuts, cilantro, and a drizzle of Sriracha sauce if desired.
