OMG what did Mel make for dinner TONIGHT??? TACO 🌮 PIE!!! Dude- so good! (Sorry for the bad pic- we were super excited about it 😂🤣) Recipe: ~LOW CARB~ 1 - lb ground turkey or beef, brown & drain. Add in 3 tbs taco seasoning (watch for added sugar) and 2/3 cups salsa (again, watch for added sugar). . Mix together in separate bowl 6 eggs and 1 cup heavy cream. Add 1 1/2 cheese (I did cheddar- it’s what I had). Add to pan and stir all together- salt and pepper to taste. . Pour into a pie dish (you’ll need 2, or I used an oven safe Pyrex... 🤷🏼‍♀️) top with more cheese- measure with your heart. Bake in oven at 375 for 30 mins. . Everyone will go back for 3rds!! Cooked again!! Super yummy!! #hubbyisoutoftown so that means I need to COOK! ~LOW CARB~ Easily one of the BEST chicken recipes I’ve had! (And I hate chicken) RECIPE: No measurements! Grease oven safe Pyrex. Add: 1 bag of riced cauliflower. Place 2 chicken breasts over (I cut mine in half because the Costco brand in HUGE). Cream cheese on top (don’t measure! Just smear it on)! Top with Everything But The Bagel Seasoning. Put in a preheated oven at 375 and cook for 40-45 mins or until the chicken juices are clear. . I’ve been cooking a lot of dinner lately- this wife is steppin’ up her GAME!! Recipe: NO MEASURING! (Low Carb) 4-5 cooked and shredded chicken breasts (I cooked mine in a crockpot all day). No sugar added low carb pasta sauce (I used Rao’s) Mozzarella Cheese Parmesan Cheese Whatever seasonings that speak Italian to you (I used Mrs. Dash Italian and Weber Garlic and Herb) LAYER in an oven safe Pyrex: Chicken, sauce, cheeses, seasoning. Measure all that shit with your heart. Cook in the oven uncovered at 375 degrees for 30-40 mins. This little dude got to have a fun adventure this morning. His mom (😂 that’s me!) decided to let him out in the front yard while the hubby and I put together our new freezer. Fast forward to 30 seconds later- he was OFF! Making friends with a German Shepard 😂 I ran after him in my flip flops with a VERY low support bra 😳. Who knew I could sprint 3 blocks in flip flops- and completely stop traffic on NobHill Blvd. 😂🤣 Our neighbors got a show! Oh well 🤷🏼‍♀️ the adventures of Louie.
