Fried peaches with raspberries, joghurt & mint
Baked avocado and bread cubes with cashews, parsley and parmesan
Here's the recipe:
2 ripe avocados
5 tbsp olive oil
1 handful of cashews
200g of shredded parmesan
1 tbsp of lemon juice
3 slices of brown bread
chopped parsley
Cut the avocados in half lengthwise, remove the stones. Cut the avocado flesh into small cubes without breaking through the peel. Put the avocado cubes into a bowl and put drops of lemon juice on the avocado. Cut the bread into small cubes, turn it in oil and spread it on a baking tray. Roast it in the oven at 150°C for about 10 minutes. Add the bread cubes to the avocado mix and season it with salt and pepper. Add parsley. Finely chop the cashews and add them to the avocado cubes. Fold in the parmesan. Fill the avocado peels with the mix and bake them in the oven at 200°C for about 10 minutes. Serve immediately.
