Let’s get started!
Preheat oven to 375ºF.
Combine butter, honey, vanilla, salt, and cinnamon in a small mixing bowl. Mix until smooth.
Squeeze half a lemon into the water. Cut apples in half lengthwise and remove the core. Slice each half into thin slivers and then soak them in the lemon water.
Microwave the soaking apples ntil soft, about 4 to 5 minutes. Drain the apples and then pat them dry.
Roll out each sheet of puff pastry to abot 12 by 12 inches. Cut out six 2-inch by 12-inch strips and then brush off excess flour.
Spread a thin layer of honey butter onto one side of each pastry strip. Arrange the apples lengthwise slightly overlapping as you go, skin towards the top.
Fold the pastry up over the apple slices. Start at one end and roll the pastry into a swirl.
Repeat steps 5 through 7 with the other sheet of puff pastry.
Place each pastry into a greased cupcake tray and bake for about 35 to 40 minutes, until golden brown

Vanilla Protein Pancakes
½ cup egg whites ½ cup plain Skyr* 1 scoop vanilla protein powder* Olive oil, to cook
1. Spray a nonstick pan with olive oil, and set to medium-high heat. 2. Combine egg whites, Skyr, and protein powder in a bowl, and stir until combined. 3. Turn down heat to medium, and scoop batter onto pan. 4. Cook with lid on, until pancakes begin to bubble (about 2-3 minutes), then flip. 5. Cook on other side until golden-brown. 6. Serve warm with extra Skyr and berries (ie. strawberries, raspberries).
NOTES:
* Skyr is an Icelandic yogurt that is naturally free of lactose. You can substitute plain Greek yogurt or plain lactose free Greek yogurt, and it should have the same effect. * I used VegaOne French Vanilla Nutritional Shake, but you can use any protein powder you would like…this is just my preferred protein powder.
EDIT: I tried making these substituting with Vega Sport chocolate protein powder, 2% fat Greek yogurt, and ¼ tsp baking powder. The baking powder provided fluffier pancakes, however, the batter was too thick, either because of the different protein powder or yogurt. Skyr is 0% fat, so perhaps the fattier yogurt added more bulk, and the chocolate protein powder scoop serving is 44g, whereas the vanilla one is 41g. Either way, when making substitutes, I would recommend using 0% fat Greek yogurt, and either sticking with the VegaOne Nutritional Shake protein powder (any flavour should be fine), or using half a scoop of another kind, and adding more, if it is needed.
Fluffier Vanilla Protein Pancakes:
1 scoop Vega Nutritional Shake: French Vanilla ½ cup egg whites ½ cup yogurt (I used 2% fat Greek yogurt) ¼ tsp baking powder
