IME as a GM even if there isn't anything in the room players will decide there must be something important in the room causing you to break character and be like "Guys there's nothing in the room."
Alternatively, these are good rooms to store important items you forgot to hand out earlier in the adventure even though you wrote down that they should be in X room during Y scene
Empty rooms are great. Party has to take a rest? An empty room can be a safe place to do that. Setting up a trap or ambush for a powerful foe down the hall? Do it in an empty room.
Also, if you're doing a whole castle, or dungeon complex, or w/e? Empty/unimportant rooms allow you to make a realistically large space without having to fill Every. Single. Gap. You're gonna find Just A Bedroom, or Just A Broom Closet, or Just An Unused Room. If you're exploring a ruined/abandoned area, this is even MORE likely!! Maybe a wall collapsed, or part of the roof fell in. No one is gonna use that space! Goblins have survival instincts!
If you never give your players empty rooms, then giving them one will be suspicious. If your players are accustomed to having empty/mundane rooms, you can better hide secrets and goodies throughout the otherwise "dead" space.
And not to make too fine a point of it, but empty rooms can add EVERYTHING. You want your long-abandoned, haunted ruin to feel creepy and foreboding? You want to build the tension? Empty rooms make (engaged) players suspicious, antsy, and paranoid. Congratulations, you've just built atmosphere by letting your players get all wrapped up in their own heads over a few empty rooms.
to add on, they're great places for bottle scenes with players, and also, if your players are really paranoid like mine you can always use it to drop some lore or hints about the place their exploring via improvisation.
an empty, derelict study of an old abandoned tower full of dust and broken furniture that your players just won't let go of? maybe, all of a sudden, there's a journal talking about the study of a monster that they'll run into later in the tower.
a kitchen in a dusty hut in the woods that's been cold for years? perhaps there are too many old bones of mice leading into the walls. yummy asbestos? a pied piper situation? a very scary take on a rat king for an enemy? you decide!
empty rooms can be great opportunities to set up beats and forshadowit in story-heavy games.
Don't want your players to waste time turning an empty room upside down looking for something that's not there? If you're using 5e, don't even let em roll for it, use their passive perception instead. "Oh, your passive perception is a 13? You can easily tell this is an empty room." This will help escape the trap of the party rolling badly for perception, making them think there's something in there that they just haven't found yet.

Currently laughing my head off at the very possible future where one day Bell’s Hells gets an animated show as well as VM and M9, and instead of Matt!Percy arguing with Taliesin!Ashton during the Hells’ first time in Whitestone, it’s of course animated and they maintain their characters
So it’s Taliesin!Ashton shouting at Taliesin!Percy
And there’s like 2 minutes of screen time that’s just Taliesin talking to himself in different voices
Of course this can happen with any of the other characters too but Ashton and Percy were the first that popped into my mind because that argument was already so good
The DnD: Honor Among Thieves main characters feel like they were made by a gaming group and DM that are really serious about perfectly blending into the canon and universe they're in, with only a touch of the usual player character shenanigans
The Baldur's Gate 3 main characters feel like real, whacky player characters of the average DnD group with a more lenient DM and a mutual desire to Have A Good Time™ who have all been playing together for a long time "I wanna have to eat magic items" "I wanna be a vampire instead of a Dhampir. Oh the most you'll let me be is a spawn? Fine, I'll take it" "I wanna be a barbarian who's, like, literally on fire all the time. No I don't know what that means. We can work it out, right, DM?" Like, I feel like I've played in that group before

Should Tumblr give me polls? Probably not because I will almost certainly use them to ask what color D&D dragon is the most fuckable.

one of the DMs I play with has, like, 70 slips of paper that say, "Loading," with bits of random D&D mechanics advice ("partial cover grants +2 to AC") that he slots onto his DM screen when he needs to look something up, assemble something, or think up a mechanic for player bullshit.
Fighter: Standing next to sunflowers always makes me feel weak, like, look at this flower. This flower is taller than I am. This flower is winning and I’m losing.
Druid: Wow, you are not ready to hear about trees.
