Fish Egg Sandwich
Didn't think this would taste good but we were so wrong. Amazing! Tuna, relish, and egg salad on a sandwich topped with sweet onion slices, lettuce, slice of sharp cheddar, a spread of Dijon mustard on one side, and a pickle. Yum.
Mac, Cheese, Broccoli & Pork. 1 bag of uncooked shells (I used gluten free brown rice shells) 8 ounce bag of shredded cheddar 4 ounces mozerella 3 cups milk 2 cups water 1 medium head of broccoli, uncooked* and chopped 1/4 of a medium sweet onion 4 pork chops, cooked, cut, and cubed 1. Place half of milk and water into a saucepan with shells on high heat, stirring constantly until cooked. When liquid is absorbed, add more until macaroni is cooked through. (Keep stirring or the wheels will stick to the pan!) remove from heat. 2. Add cheese and stir until well-incorporated. Add broccoli*, onion, and pork. Serve warm. *you may cook the broccoli if you like! We enjoy the taste and texture of uncooked broccoli and the recipe is tailored to our taste--make it any way you like!

Ginger Chicken Soup
2 uncooked chicken breasts, cut into bite-sized pieces 1/2 cup quinoa 5 cups chicken stock 2 cups chopped frozen spinach 1 small piece of fresh ginger, sliced Italian seasoning Pepper Garlic powder Nutmeg 1. Place 1/2 cup of chicken broth in saucepan on high. When boiling, quickly add quinoa, set to low, and cover. Watch diligently and turn off burner when all liquid is absorbed, 10-15 minutes. 2. In a pan, add 1/2 cup of broth and add ginger and seasonings, to taste. Add chicken and make sure all pieces cook through thoroughly. 3. When quinoa is done, set burner to low, add 4 cups of chicken broth and frozen spinach. 4. When chicken is done, add entire contents of pan to quinoa, spinach and broth mixture. Allow to steep together on low for 20-30 minutes. Serve warm.
"2 cups half and half 1 heaping cup Parmesan 2 tablespoons potato flour 1/2 cup butter 3/4 cup frozen chopped spinach 3 cloves garlic 1. Cook spinach in butter over LOW heat. 2. Add half and half. When warm, fold in potato flour. Add garlic. 3. Fold in cheese. Serve warm." A picture wouldn't look as good as this smelled. Make it right now!
Creamy Squash Risotto 4 cups chicken broth 1/2 block of frozen cooked squash 1/3 cup white wine 2/3 cup half & half 1 tblsp olive oil 3 tblsps butter 1 1/2 cup ariborio rice Rosemary, pepper, and Italian seasoning to taste About 40-50 minutes cooking time. Makes about 4 servings. 1. Combine liquids into pot and bring to boil. Once boiling, add squash. Once thawed completely, stir thoroughly, then cover and set to low. 2. Heat butter and oil in separate pan on medium heat. Add rice and stir to coat until grains are translucent. 3. Add ladle of hot broth mixture to rice. Continually add broth mixture by the ladle when rice absorbs all liquid. When all liquid is absorbed, add seasoning and stir in completely. Serve warm.

Fresh sliced Ginger (1x3" piece) Handful frozen goji berries 2 quarts water 3.5 tablespoons sugar in the raw Put all ingredients together in a pot and bring to boil. Let simmer for 3 mins. Bottle. Chill. Enjoy. Duh. Ginger slices can usually be re-used for 1 more pot of tea :) can be made w.o goji berries too
