I was craving pancakes! But instead of going to IHOP like I wanted to, I decided to make these wheat-free/gluten-free 'pancakes'. I used 1 1/2 tbsp. of almond butter, two bananas, one egg and a scoop of vanilla protein powder (optional). I mixed it all in the blender, used olive oil cooking spray (you can use coconut oil, etc), and cooked them in a skillet (on low heat). This made about six servings.
