These past few weeks have been all about the culinary foundations.. STOCKS, BROTHS, SOUPS & clarified butter. This French Onion Soup {a hearty broth} & a beef vegetable soup {a clear broth}. .. SWIPE RIGHT➡️➡️ to see more of the caramelization process.. from a science standpoint the chemical reaction of sugar in the onions turning into amino acids gives this classic soup that savory unami flavor and a thicker body in the soup. .. We started to have tastings in class, which has been fun and I am working on perfecting my knife cuts. Apparently I have been holding my knife wrong this while time..so I had to make some adjustments. These next few weeks I want to focus on this precision.

Mondays are all about getting those greens in for an energy-full week 🍃🍚🌿✨ Dinner tonight was sautéed garlicky broccoli and peas with lots of spices, served with fluffy lemon basmati rice, alfalfa sprouts, sliced avocado and a sprinkle of cracked black pepper, paprika and fresh squeezed lemon. This is so simple and so delicious! Not to mention, loaded with plant protein! 🌟 RAD lil’ Fact: 1 cup of broccoli has 2.5g of protein, and 1 cup of peas has 8g of protein!💪🏼🌱 #letscookvegan #glutenfree #avomonday

“Most of my memories revolve around really good food,” says Esteban Castillo (@chicanoeats), the Southern California-based blogger and cook behind the bold colors and flavorful recipes of Chicano Eats. After growing up in Los Angeles in a Mexican-American family, Esteban studied graphic design in college, a skill which prompted him to re-examine the way other Americans looked at Mexican food. “Here in the US, people think it’s just tacos and burritos, street food,” he says. Inspired by German-American artist Josef Albers’ work with monochromatic colors, Esteban began experimenting with placing his dishes — everything from Cara Cara orange mezcal sours to pulled pork sliders to coconut café de olla popsicles — against similarly colored backdrops. “By putting Mexican food in this minimalist, colorful setting, it just puts the spotlight on the food,” he says. While some of Esteban’s recipes are traditional Mexican, others are a fusion, a nod to both his heritage and his upbringing in one dish. “Honestly,” he says, “I can’t even distinguish between what’s Mexican and what’s American anymore.”
This summer, I'm going to rock a bikini at the beach and feel confident doing so! Tried strawberry banana shakeology this morning. 🍓🍌👌 I've been kind of off track the past few days ..emotionally, mentally, physically. I feel like it's one step forward, 3 steps back 😐 I feel like I am trying and then sometimes honestly I am not sure if I am trying hard enough..if I am giving 110%...but I feel so emotionally tired!! Gahh 😥 So this month I am going to try some new things out....I will be starting Core de Force, but I have decided to treat it as a mental fitness program instead of a means for me losing weight. My abs aren't where I want them to be ..and my weightloss is super slow...but I think this is because I I have a lot of mental blocks that I need to FIGHT through. 👊 First step...NUTRTION and I am starting it off with the superfood #Shakeology!!!
