Double also: getting in touch with heirloom varieties and growing traditions again! You can have tomatoes in march that still taste and feel fresh if you seek out the right hanging storage varieties - a guy named Hans Fama has been in the spotlight lately for developing / re-finding some of those breeds, but delicious storage varieties exist for most crops, especially the ones humans have been domesticating and nurturing for millennia... combined with chilling and refrigeration techniques, you get cool facts like that even most "fresh" supermarket apples are over a year old before they get to you!

Heres another long shelf life tomato that can last up to a year, this time a Spanish Ramallet. Honestly I think a lot of fantasy authors could take a lesson from sci-fi and just, have their fantasy worlds explicitly *not* show The Entire World as it exists in-universe. If that makes sense. Like in space exploration stuff it's common to namedrop a bunch of shit we're not unpacking right now to signal the expansiveness of the universe without having to do extensive worldbuilding for like 100s of cultures you're only gonna see once. It's honestly weird that high fantasy rarely ever does this! This is the easiest ticket out of (gestures broadly) the whole "one (1) country for Africa and Asia each" thing. Maybe it's not relevant to the plot maybe your map is only covering a specific corner of the world where the story is happening. It can still exist in the background. You can just do that

FYI if your employer does this, if they have done it for a long time especially, you and your coworkers could be owed huge amounts of unpaid wages and it would be an easy suit if there is a paper trail like this and your employer is placing strict requirements on your behavior while not at work. A national park I worked at had all the permanent rangers (I was seasonal) basically on stand by for call outs 24-7 or they were penalized on their reviews.

They got tired of it, sued, won, and the nps had to pay back YEARS of back wages for stand by time. Now they are all scheduled and if* you get called out its time and a half.
