Garlic, herbs, tomatoes, olives, and feta cheese come together in this Mediterranean Chicken recipe to make a delicious dish that tastes like it came from the coast of the Mediterranean. It's simple to make and tastes great for a weeknight dinner.
Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon dried thyme. 1/2 teaspoon dried rosemary. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup cherry tomatoes, halved. 1/4 cup pitted kalamata olives, sliced. 1/4 cup crumbled feta cheese. 2 tablespoons chopped fresh parsley.
Instructions: Preheat oven to 375F 190C. In a small bowl, mix together olive oil, minced garlic, oregano, basil, thyme, rosemary, salt, and pepper. Place chicken breasts in a baking dish and brush both sides with the olive oil mixture. Top each chicken breast with cherry tomatoes and kalamata olives. Bake in the preheated oven for 25-30 minutes or until chicken is cooked through. Remove from oven and sprinkle crumbled feta cheese over the chicken. Garnish with chopped parsley before serving.
