This casserole is a tasty and spicy take on the classic cheeseburger. It has ground beef, pasta, tomatoes, cheese, and a kick from jalapenos and other spices.
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 can diced tomatoes. 1 cup beef broth. 1 cup tomato sauce. 2 cups pasta penne or elbow macaroni. 1 cup shredded cheddar cheese. 1/2 cup shredded mozzarella cheese. 1/2 cup chopped pickled jalapenos. Salt and pepper to taste. 1 tablespoon olive oil. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper.
Instructions: Warm the oven up to 190C 375F. Warm up the olive oil in a big pan over medium-low heat. Add the garlic and onions and cook until they get soft. Using a spatula, break up the ground beef as you add it to the pan. Cook until it turns brown. Beef broth, tomato sauce, chili powder, paprika, cayenne pepper, salt, and pepper should all be stirred in. Let it cook for 10 minutes. In the meantime, cook the pasta until it's al dente according to the directions on the package. Remove the water and set it aside. Put cooked pasta, the beef mixture, chopped jalapenos, and half of the shredded cheddar and mozzarella cheese in a large bowl. Combine well. Put the mixture in a casserole dish that has been greased. Add the rest of the shredded cheese on top. Put it in an oven that's already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles. Enjoy while hot!
