Each year on July 18, communities large and small around the planet set aside time to recognise Nelson Mandela International Day, the anniversary of the birth of one of the twentieth century's most enduring advocates for peace and human rights.
The United Nations formally adopted the occasion in 2009 not simply to honour Mandela's long battle against apartheid, but to remind everyone that meaningful change begins whenever ordinary people spend 67 minutes lending a hand to someone else.

The fabulous mense at @foodforwardsa are inviting you to embody the spirit of Mandela Day and help us fill the gap of not being able to host our usual Food Drives because of Covid, by hosting a food drive among your family, friends, colleagues or neighbourhood. It won’t take you longer than 67 minutes to organise. We find that the following non-perishable food items are always in demand: Rice, Maize Meal, Spaghetti, Samp and Beans, Soup Mix, Lentils, Pilchards, Tuna, Long Life Milk, Oats, Jam, Peanut Butter, Cooking Oil, Salt and Sugar. If you would like to volunteer by doing a food drive, please contact Fayrene at [email protected] Here’s a fab recipe with some of the surplus food generously donated by the likes of @rialtofoods Roasted Butternut Risotto, Shaved Parmesan, Crisp Sage and Toasted Macadamia Nuts Serves 6 1 large butternut 1 medium onion 3 cloves garlic 200g butter 2ltr chicken stock 200g Parmesan 1 cup sage leaves 100g. macadamia nuts 1tsp cinnamon 1tsp nutmeg 3tblsp. soft brown sugar 300g Arborio rice Peel and de-seed butternut. Put peel and seeds into chicken stock and bring to a boil. Roughly chop the butternut, put on a baking tray, dab with a little butter, season with cinnamon, nutmeg and brown sugar and a little salt and pepper. Place in a hot oven and roast until butternut is soft and begin to caramelise. Finely chop the onions and garlic and sweat in a little butter in a saucepan until soft and translucent. Add the rice and stir for a couple of minutes Strain the chicken stock and pour a ladle full at a time onto the rice, stirring occasionally. Continue this process until all the liquid is used and the rice is cooked. Remove from the heat and add the roasted butternut and season to taste.
