If I was trapped on a deserted island the food I would want to eat everyday is and has always been sandwiches. Gah, I love them so much. I even worked at Togos/Baskin Robbins back in 2006 where I gorged myself on handcrafted amazing sandwich combinations (and a ton of ice cream) every day for a year. It was amazing for my cravings but horrible for my weight as it helped me get up to my highest weight ever recorded of 275 (although I’m pretty sure I weighed much more than that but I was too scared to step on the scale to find out).
The fact that I started this blog and most recent weight-loss adventure only 15 pounds shy of this highest weight scares the beejeezers out of me. But, this is why I’m here and I’m so grateful for the supportive community Tumblr has brought me. Since being on Tumblr for over 7 years total I’ve gone from my old Tumblr starting weight...
...to my lowest adult weight in 2016...
...to taking a year off where I restarted in June at 260 to where I am today at 247.4 working my “weigh” back down (chuckle). With so many different-weighted versions of myself it’s important to remember my value and worth is not caught up in whether I’m 275+ or 165. While I might like myself in pictures more at a lower weight that doesn’t mean I like myself better then. I’m a pretty awesome person regardless of what I weigh.
Where was I? SANDWICHES! When I go to brunch I immediately look for whatever egg sandwich option they have and solely rate the restaurant off of the quality of it. That and how cheap their mimosas are. I was initially adamantly against going on keto because sandwiches. But thanks to some kitchen magic I find I don’t miss them as much anymore.
Behold - one of my first favorite keto meals - almond bun, bacon and egg open face sandwich. Yes, the calorie count is pretty hefty on this meal but I’m expecting it will keep me full until dinner. This current round of keto has been my favorite thus far. We’ve stayed creative in the kitchen and are mixing up our recipes a lot more than ever before. Also, since I’m now tracking every single thing I eat instead of assuming calories don’t count if I’m eating all the bacon, this should also be my most successful keto run yet.
