What would you say is the most “out there” Digimon? A Digimon that makes a reference so obscure and out of the public consciousness that kind of makes you go, “woah, they know about that??”
One relevant to you would be Ajatarmon, based on the Finnish Ajatar legend, though from what I can tell, not a lot of the mythology made its way over.
Another good one is Mastemon, based on Mastema, an angel or fallen angel (or possibly something else entirely) from apocryphal Jewish texts that was a herald of disaster and may have been a prototype for the Satan figure. Authors couldn't agree on whether Mastema was working for god or not and Mastemon is a union of good and evil Digimon.
I think one of the best cases of the designers doing their research is Tlalocmon. It's based on the Aztec god Tlaloc and has enough references to Aztec art in its design that one guy on Twitter made a huge post about it.

Man tho, this episode was so dark. Take away the fantasy elements and it's a yandere stalker attacking anyone who talks to the target of her affection.
But, later, when Ajatarmon starts mutilating herself to try to become human and get Yuto to feel love for her, I started to pity her. Like, I was expecting the kids to talk it out with her and for her to understand what she done damaged their friendship, and have her help undo the damage she caused. Maybe even become another part of the main cast alongside Yuto. But she straight-up dies instead.
Also, there's lasting consequences with parts of Kiyoshiro's body remaining vines, like, what about Ajatarmon's other victims?
