Have these biscuit waffles for breakfast or brunch. They taste great with lemon cream, lemon syrup, and blueberries. The biscuit dough turns into fluffy waffles, and the sweet syrup and tangy lemon cream give them a great taste. Fresh blueberries add a burst of color and freshness, making this a great treat for the morning.
Ingredients: 1 tube refrigerated biscuit dough. 1 cup heavy cream. 2 tablespoons powdered sugar. 2 lemons, zested and juiced. 1/2 cup granulated sugar. 1/2 cup water. 1 cup fresh blueberries. Cooking spray or oil for waffle iron.
Instructions: Preheat your waffle iron according to the manufacturer's instructions. Open the tube of biscuit dough and separate the biscuits. Place each biscuit in the center of the preheated waffle iron. Close the lid and cook until the waffles are golden brown and cooked through, usually 2-3 minutes. While the waffles are cooking, prepare the lemon cream. In a mixing bowl, whisk together the heavy cream, powdered sugar, and the zest of one lemon until it reaches stiff peaks. Set aside. In a small saucepan, combine the granulated sugar, water, and the juice of two lemons. Bring to a boil, then reduce the heat and simmer for about 5 minutes until the syrup thickens slightly. Remove the waffles from the iron and place them on serving plates. Top each waffle with a generous dollop of lemon cream, drizzle with lemon syrup, and scatter fresh blueberries over the top. Serve immediately and enjoy!
