This cake is vegan-friendly and tastes great with the sweet flavors of blueberries and coconut. It's soft, fluffy, and full of juicy blueberries, so it's a great treat for any event.
Ingredients: 2 cups all-purpose flour. 1 cup shredded coconut. 1 cup coconut milk. 1 cup maple syrup. 1/2 cup coconut oil, melted. 1/4 cup unsweetened applesauce. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 1/2 cups fresh blueberries, divided.
Instructions: Preheat the oven to 350F 175C. Grease and flour a 9-inch round cake pan. In a large mixing bowl, combine flour, shredded coconut, baking powder, baking soda, and salt. In another bowl, whisk together coconut milk, maple syrup, melted coconut oil, applesauce, apple cider vinegar, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in 1 cup of fresh blueberries into the batter. Pour the batter into the prepared cake pan, spreading it evenly. Sprinkle the remaining 1/2 cup of blueberries on top of the batter. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

These delicious Paleo Blueberry Honey Coconut Cups combine the sweet taste of honey and blueberries with the exotic taste of coconut. For those who are on a paleo diet, they are the ideal snack or dessert.
Ingredients: 1 cup fresh blueberries. 1 cup unsweetened shredded coconut. 1/4 cup raw honey. 2 tablespoons coconut oil, melted. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Set oven temperature to 175C 350F. Blueberries, shredded coconut, raw honey, melted coconut oil, vanilla extract, and a small pinch of salt should all be well combined in a bowl. Use paper liners to line a mini muffin tin. Evenly spoon mixture into muffin cups, gently pressing to compact. Bake until the edges turn golden brown, 15 to 20 minutes. After a few minutes of cooling in the muffin tin, move the coconut cups to a wire rack to finish cooling. Present and savor!

Instructions: In a blender, combine the frozen blueberries, coconut milk, ice cubes, and 1 tablespoon of honey or maple syrup. Blend until smooth and pour the mixture into a glass, filling it halfway. Rinse the blender, then add the plain yogurt, shredded coconut, remaining honey or maple syrup, and vanilla extract. Blend until smooth and pour this mixture on top of the blueberry layer in the glass. Garnish with fresh blueberries and a sprinkle of shredded coconut. Insert a straw or a long spoon, and serve immediately.
