Foods with high Alkaline phosphatase is an enzyme produced primarily by your liver, bones, kidneys, and intestines. Selenium is a cofactor in over 25 selenoproteins including glutathione peroxidase (your body's master antioxidant enzyme) and iodothyronine deiodinase (which converts thyroid hormone T4 into active T3). Deficiency is quietly common, particularly in regions with selenium-poor soil including large parts of Europe and Asia.

Selenium activates thyroid hormones and protects the gland from oxidative damage during hormone synthesis.

High Oleic Sunflower Oil Not All Sunflower Oil Is the Same
Most people don't realise there are two completely different sunflower oils on the market. Regular sunflower oil is high in omega-6 linoleic acid a polyunsaturated fat that oxidises quickly under heat, creating inflammatory byproducts. High oleic sunflower oil is a different variety, bred to be over 80% oleic acid the same monounsaturated fat that makes olive oil heart-protective.
🫒 Think of it as olive oil's heat-stable cousin
Extra virgin olive oil is excellent but has a moderate smoke point (~190°C) and loses antioxidants above that. High oleic sunflower oil has a smoke point of 230°C+, is almost entirely monounsaturated, has a neutral flavour, and is significantly cheaper. For high-heat cooking, it genuinely outperforms EVOO on stability without the cost.
Heart health
High oleic acid content reduces LDL cholesterol while maintaining or raising HDL the same mechanism as olive oil.
Oxidative stability
Monounsaturated fats resist oxidation at high heat. Fewer harmful aldehydes produced compared to regular sunflower oil.
Inflammation
Low in omega-6 (unlike standard sunflower oil). Doesn't contribute to the omega-6/omega-3 imbalance most Western diets already have.
Shelf life
Oxidises far more slowly than regular sunflower or vegetable oil meaning it doesn't go rancid as quickly once opened.
