Spring Sandwich with Tempeh Bacon, Arugula and Broccoli Sprouts
Broccoli Sprout Shot (Raw Vegan)
I've always hated the sweet, ketchupy lunchroom/Campbell's tomato soup so I was skeptical about trying a tomato bisque but boy is it turning me into a tomato soup fan! .. I took the Chef John tomato bisque recipe which uses rice to create creamy texture and simply replaced the 1/2 cup of heavy cream with plain soy milk! Garnished with plain almond yogurt and fresh broccoli sprouts I started this week it's the perfect late winter meal 🍅🌱
This is the progress from just a few days! It's growing so fast, it really is a flower.
I bought some broccoli sprouts the other day and I had to show you guys the package. After checking out their website I could kind of understand why did they choose this picture for the package, but still.... it's an interesting choice.

There's already native greens (sheep sorrel) in the yard and spinach in the garden (from last year!) popping up but while I wait for them to propagate a bit more I love sprouting to add freshness to my late winter/early spring meals 🌱 .. In addition to lentils and dried green peas, my new favorite thing to sprout is broccoli seeds from @countrylifefoods! For just over $10 I got enough seeds to do SO many batches of sprouts (2 tbsp of seeds yielded almost 6 cups of sprouts)!
Talking about broccoli sprouts, today we bought a jar and some seeds... we're definitely not good/knowledgeable about taking care of plants, but starting today we're going to try growing our own sprouts - stay tuned for updates in the future!
