Healthy Mini Baked Blackberry Cake Donuts (V/GF)

Tres leches cake donuts with rainbow sprinkles

CAKE DOUGHNUTS

2 eggs, beaten 1 c. sugar 1 c. buttermilk 1/3 c. oil 1/2 tsp. salt 1 tsp. soda 1 tsp. baking powder 1 tsp. nutmeg 3 to 3 1/2 c. flour

Mix and leave in refrigerator overnight (makes easier to handle). Roll dough out and cut doughnuts with a cutter. Place in very hot oil. Turn doughnuts as soon as they surface. With hot oil, need to be watched so they won't burn.

What are your thoughts on matcha? I added matcha cake donuts with a matcha glaze to my shop and I’m giddy about it.

Was at a local market and found Chana’s Bakery as a vendor which struck my interest since it’s pretty hard to find ube flavored desserts. I ended up getting my own selection of cake donuts from their online shop and got the Ube, Rainbow, Italian Cookie, Vanilla Bean, Black & White, and Lemon Blueberry flavors. Out of the bunch, I’d say that the Ube and Rainbow were the most standout flavors to me.
