Ok! Tuesday menu is as follows:
Lunch: Teryaki marinated chicken thighs (I actually made this for yesterday’s dinner but I ended up not eating dinner last night)
Snack: matcha latte and a few dark chocolate covered almonds - yum
Dinner: turkey sloppy joe stuffed bell peppers (I honestly wasn’t super hungry today either but I made sure to eat at least half a stuffed pepper)

This Chicken Teriyaki Stir-Fry is perfect for a quick and healthy weekday meal prep. Packed with colorful vegetables and tender chicken, it's coated in a homemade teriyaki sauce that's sweet, savory, and delicious. Prepare it in advance and enjoy it throughout the week!
Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 carrot, julienned. 1/2 cup snow peas, trimmed. 2 cloves garlic, minced. 1/4 cup low-sodium soy sauce. 2 tablespoons honey. 1 tablespoon cornstarch. 1 teaspoon sesame oil. 1/2 teaspoon grated fresh ginger. 2 tablespoons vegetable oil. Salt and pepper to taste. Cooked rice or noodles for serving.
Instructions: In a small bowl, whisk together soy sauce, honey, cornstarch, sesame oil, and grated ginger to make the teriyaki sauce. Set aside. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken to the skillet and stir-fry for 3-4 minutes until it's cooked through and no longer pink. Season with salt and pepper. Remove the cooked chicken from the skillet and set it aside. In the same skillet, add a bit more oil if needed and stir-fry the garlic, broccoli, red and yellow bell peppers, carrot, and snow peas for about 5 minutes until they are tender-crisp. Return the cooked chicken to the skillet and pour the teriyaki sauce over the chicken and vegetables. Stir well to coat everything with the sauce. Continue to cook for another 2-3 minutes until the sauce thickens and everything is heated through. Serve the Chicken Teriyaki Stir-Fry over cooked rice or noodles.
