Ingredients: 2 cups cooked quinoa. 1 cup chickpeas, drained and rinsed. 1 cup diced cucumber. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/2 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup extra-virgin olive oil. 2 tablespoons lemon juice. 1 teaspoon ground cumin. 1/2 teaspoon ground coriander.
