Roasted Dandelion Root Coffee with Chicory Root & Cinnamon (Vegan)
I’ve been trying to find a tasty way to drink chicory root in the morning instead of coffee, so that I’m not drinking coffee all day and feeling cracked out and wild-eyed by the end of the day. I’ll still drink coffee in the afternoon. Anyway, I think I found it! I heat up 3/4 mug of milk, then add a little bit of sugar and about 1/4 cup of brewed chicory root. I guess it would be equivalent to a chicory latte sort of? But the nice part is I can brew a French press of chicory root on Monday, and then store it in a jar for the rest of the week. Makes it real easy and fast. It’s got a similar bitterness bite as coffee, without the…jitterness? Brewed chicory root also has some floral scents too, it’s interesting. Highly recommended for a falltime, wintertime, or early springtime warm drink without caffeine.
I foraged quite a bit of chicory root today!

Herbal Coffee
People who would like to get off coffee face challenges: alternative coffees on the market are incredibly pricey, are too sweet, or are just not like coffee at all. This is a simple recipe everyone can do at home and I can assure you, it tastes like coffee!
Here is what you need: ☕ 3 parts roasted chicory root ☕ 3 parts roasted dandelion root ☕ 2.5 parts burdock root ☕ 1 part cinnamon ☕ 1/2 part orange peel
Since we use a lot of roots in this coffee it’s best to make a decoction out of it: a decoction takes about 20-30 minutes to simmer on the stove so we get all the flavors. I use a medium sized cooking pot and measure my parts in teaspoons. Since I am a morning blend person my coffees tend to be on the lighter side so if you want a stronger blend just add more chicory. You can also add a pinch of cacao at the end for a fuller coffee flavor (please keep in mind that cacao has a little bit of caffeine). The whole pot lasts me for a whole day.
I ordered all my herbs in bulk through amazon since I buy everything in bulk but you can order these herbs in smaller amounts as well and try if you like drinking this.
Enjoy your herbal coffee! ☕
