Ingredients: 2 lbs beef chuck roast, cut into chunks. 1 cup beef broth. 1 can 15 oz tomato sauce. 1/4 cup chili powder. 1 tsp cumin. 1 tsp garlic powder. 1 tsp onion powder. Salt and pepper to taste. 6 large flour tortillas. 2 cups shredded cheddar cheese. 1/4 cup chopped fresh cilantro optional. Sour cream and diced tomatoes for garnish optional.
Instructions: In a slow cooker, combine beef chunks, beef broth, tomato sauce, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cover and cook on low for 6-8 hours or until beef is tender and easily shreds with a fork. Preheat oven to 350F 175C. Place a generous amount of beef mixture onto each flour tortilla, sprinkle with shredded cheddar cheese, and roll up tightly. Place rolled burritos seam-side down in a baking dish. Bake in preheated oven for 10-15 minutes or until tortillas are slightly crispy and cheese is melted. Garnish with chopped cilantro, sour cream, and diced tomatoes if desired. Serve hot and enjoy!
