Ingredients: 2 cans of chili. 1 can of black beans, drained and rinsed. 1 can of diced tomatoes. 1/2 cup frozen corn. 1/4 cup diced red onion. 1/4 cup chopped green bell pepper. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. 1 cup chicken broth. 1/4 cup chopped fresh cilantro. Sour cream and shredded cheddar for garnish.
Instructions: In a large pot, combine the chili, black beans, diced tomatoes, frozen corn, red onion, and green bell pepper. Add chili powder, cumin, salt, and pepper to taste. Stir well to combine. Pour in the chicken broth and bring the soup to a simmer over medium heat. Let the soup simmer for 15-20 minutes to allow the flavors to meld together. Stir in fresh cilantro just before serving. Ladle the soup into bowls and garnish with a dollop of sour cream and a sprinkle of shredded cheddar. Serve hot and enjoy the Mitten-inspired delight!
