In a unique inside-out salad form, you can enjoy the flavors of a traditional Chinese spring roll. This bright and refreshing salad has just the right amount of textures and flavors, with soft chicken, crunchy vegetables, fragrant herbs, and a tasty sesame-ginger dressing.
Ingredients: 1 cup cooked and shredded chicken breast. 8-10 large lettuce leaves. 1 cup cooked rice vermicelli noodles. 1 cup julienned carrots. 1 cup julienned cucumber. 1/2 cup bean sprouts. 1/4 cup chopped fresh cilantro. 1/4 cup chopped fresh mint leaves. 1/4 cup chopped roasted peanuts. 2 tablespoons sesame seeds. 2 tablespoons soy sauce. 2 tablespoons rice vinegar. 2 tablespoons honey. 1 tablespoon sesame oil. 1 clove garlic, minced. 1 teaspoon grated fresh ginger. Salt and pepper to taste. Lime wedges for serving.
Instructions: Wash and pat dry the lettuce leaves to get them ready. Shred the chicken and put it in a large bowl. Add the rice vermicelli noodles, carrots, cucumber, bean sprouts, cilantro, mint, and roasted peanuts. Add the honey, sesame oil, minced garlic, grated ginger, salt, and pepper to a small bowl. Use a whisk to mix the ingredients. Pour the dressing over the salad ingredients and toss to mix. Make sure the dressing covers everything well. Place a small amount of the salad mixture in the middle of each lettuce leaf to make it look nice. Add sesame seeds to the top of each lettuce leaf that has salad in it. Put lime wedges on the side so that you can squeeze them over the top of the Inside Out Chinese Spring Roll Salad right before you eat it.
