The other day, I asked a client about her favorite dessert, as I was working on a menu for her dinner. She told me that she likes butter cookies and chocolate. This immediately made me think about one of my favorite desserts, the mosaic cake. It is a cultural staple in Turkey, and frequently made at home and served as part of a casual meal. It is so common that it is known by many different names across various cultures in Turkey such as “mosaiko sokolatas” among Greeks and “gato salam” among the Jews. Mosaic cake is typically made by using store bought cookies and ganache, and it is served in the shape of a loaf. I wanted to modify this recipe to turn it into a fancy dessert to fit the occasion. To achieve that, I layered home made vanilla cookies and the ganache instead of mixing them and added roasted Turkish pistachios. I also covered the dessert with a chocolate glaze and placed a 24k gold leaf as a final touch.
