Ingredients: 2 cans 13.5 oz each coconut milk. 1 cup pineapple chunks fresh or canned. 1/2 cup sugar. 1 tsp vanilla extract. 1/4 tsp salt. 1/2 cup shredded coconut optional, for garnish.
Instructions: Put pineapple chunks, coconut milk, sugar, vanilla extract, and salt in a blender. Mix until it's smooth. Put the mixture into an ice cream maker and churn it according to the machine's instructions until it's the consistency of soft serve. Move the ice cream that has been churned to a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm. If you want, you can sprinkle shredded coconut on top before serving.
