A more healthful version of the traditional fried rice dish is quinoa fried rice. It's a tasty and nutrient-dense meal option that's loaded with vibrant veggies and protein.
Ingredients: 1 cup cooked quinoa. 2 tablespoons vegetable oil. 1 small onion, chopped. 2 cloves garlic, minced. 1 cup mixed vegetables carrots, peas, bell peppers. 2 eggs, beaten. 3 tablespoons soy sauce. 1 teaspoon sesame oil. 1/2 teaspoon ginger powder. 1/2 teaspoon black pepper. 1/4 cup chopped green onions. Sriracha sauce optional, for serving.
Instructions: Heat vegetable oil in a large skillet or wok over medium-high heat. Add chopped onion and minced garlic, and saut for 2-3 minutes until they become fragrant and slightly translucent. Add mixed vegetables and stir-fry for another 3-4 minutes until they start to soften. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until they are fully cooked and then mix them with the vegetables. Add the cooked quinoa to the skillet and stir-fry everything together for about 2-3 minutes. Pour soy sauce, sesame oil, ginger powder, and black pepper over the quinoa and vegetable mixture. Stir-fry for an additional 2 minutes until well combined and heated through. Remove from heat and garnish with chopped green onions. Serve hot with Sriracha sauce on the side if desired.
