Ingredients: 1 cup gluten-free all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter. 1/2 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup unsweetened applesauce. 1 cup diced apples peeled and cored. 1/2 cup chopped pecans optional. 1/4 cup caramel sauce gluten-free. 4 ounces cream cheese, softened. 1/4 cup powdered sugar. 2 tablespoons milk.
Instructions: Preheat the oven to 350F 175C. Grease a 9x5-inch loaf pan and set aside. In a small saucepan, melt the butter over medium heat. Cook until it turns golden brown, stirring frequently. Remove from heat and let it cool slightly. In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. In another bowl, beat together the browned butter and brown sugar until creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce, until well combined. Fold in the diced apples and pecans if using. Pour half of the batter into the prepared loaf pan. Drizzle half of the caramel sauce over the batter. Repeat with the remaining batter and caramel sauce. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. While the bread is baking, prepare the cream cheese icing. In a small bowl, beat together the softened cream cheese, powdered sugar, and milk until smooth and creamy.
