Ingredients: 1 cup quinoa, cooked. 1 can 15 oz chickpeas, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. 1 cucumber, finely diced. 1 cup Greek yogurt. 2 tablespoons lemon juice. 2 tablespoons fresh dill, chopped. Salt and pepper to taste.
Instructions: In a food processor, combine cooked quinoa, chickpeas, breadcrumbs, red onion, garlic, cumin, paprika, salt, and pepper. Blend until a dough-like consistency forms.
