Snickerdoodle Cupcakes

Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup buttermilk. 2 tbsp pink food coloring. 1/4 cup sour cream. 1/4 cup hot water. Cream cheese frosting. Pink sprinkles optional.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a separate mixing bowl, beat the softened butter and granulated sugar until creamy and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. In a small bowl, combine the buttermilk and pink food coloring. Mix until the color is evenly distributed. Add the dry ingredients to the butter mixture in three parts, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined. Stir in the sour cream and hot water until the batter is smooth. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Once the cupcakes are completely cool, frost them with cream cheese frosting. Instructions: Preheat your oven to 350F 175C and line a muffin tin with 12 cupcake liners. In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Add the softened butter, eggs, and vanilla extract to the dry ingredients. Mix until well combined. Gradually pour in the milk while continuing to mix until the batter is smooth and creamy. Fold in the semisweet chocolate chips into the batter. Spoon a small amount of cupcake batter into each cupcake liner, filling it about one-third full. Place a teaspoonful of vanilla cream filling in the center of each cupcake. Cover the vanilla filling with more cupcake batter, filling each liner about two-thirds full.
