For the lemon cream cheese frosting:. 8 oz cream cheese, softened. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 2 tablespoons lemon juice. 1 teaspoon lemon zest. Yellow food coloring optional. Lemon slices and poppy seeds for garnish.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the lemon juice and lemon zest. Gradually add the dry ingredients mixture to the wet ingredients, mixing until just combined. Stir in the poppy seeds. Fill each cupcake liner about two-thirds full with the batter. Bake for 18-20 minutes or until a toothpick inserted into a cupcake comes out clean. Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
