I found a way to access some of the Lego Ninjago character description archives via the Wayback Machine and the Ninjago Wiki. So I've found descriptions of the Ninja (and some other characters) made back during season 3, and it is a goldmine of old information that I kind of wish had been better preserved. In case nobody else has ever seen it, here's some of the fun trivia I got from the webpage archives:

Cole's favourite colour is orange.

Cole apparently brings books into battle because he gets bored otherwise.

Cole's childhood nickname was Bucket

Jay loves to dance to the Electric Boogie

Jay wakes up in his sleep because he accidentally shocks himself awake

Kai used to juggle hammers to entertain a baby Nya.

Kai was almost named Ash (he was called Ash for the first few months of his life)

Kai burned his eyebrows off once. Nobody noticed because he drew himself new eyebrows with a marker.

Nya had a stuffed dragon plush as a kid.

Cyrus Borg invented an electric bath mat and a nuclear powered toothbrush.

I may keep hunting for old Lego stuff if I'm bored later, because I think this stuff is interesting. If I find anything else interesting, I'll try to share it. But my hands are sweaty and my dexterity is awful today, so idk how much I can do.
