Pineapple Cherry Smoothie Soup is full of tropical flavors and good for you antioxidants. A great snack for a quick pick-me-up or a tasty alternative to dessert.
Ingredients: 2 cups frozen pineapple chunks. 1 cup frozen cherries, pitted. 1 banana, peeled. 1 cup Greek yogurt. 1 cup coconut water. 1 tablespoon honey. 1/2 teaspoon vanilla extract. Ice cubes optional.
Instructions: Combine frozen pineapple chunks, frozen cherries, banana, Greek yogurt, coconut water, honey, and vanilla extract in a blender. Blend on high speed until smooth and creamy. If the consistency is too thick, you can add ice cubes and blend again until desired thickness is reached. Pour the smoothie soup into bowls. Garnish with additional pineapple chunks, cherries, and a drizzle of honey if desired. Serve immediately and enjoy this refreshing Pineapple Cherry Smoothie Soup!

We have not been the best models for healthy eating (or even “kinda healthy eating” 🤦🏼♀️) over the last few weeks. We just got home from a trip to the Outer Banks (baby K’s 1st beach trip!), where cupcakes may have counted for lunch one day (know that M worked hard to get that amount of icing on her face). And it is time to get back in the habit of meal-planning and working towards healthier eating. My goals for the next few months (I can’t think in terms of a year right now!): 1. Small steps. I have 2 toddlers and a newborn. I’m sleeping very little. I need to keep my expectations realistic and be fair to myself. 2. Focus on consistency. My husband has been in charge of way more kid meals than usual and I realized how important it is for us to be on the same page with feeding practices (duh!). 3. Focus on my food too! I have had to eliminate dairy and soy for Baby K. We went down this road with the other kids as well, so it’s not a new concept...but I’d like to focus on maintaining a healthy variety in my diet while also (hopefully) getting my body to a place where I’ll feel comfortable and confident this summer for the multiple weddings we have coming up 👗. So! Today’s small step was banana milkshakes for snack. Both kids wanted cookies. And this alternative really did work to curve their sugar cravings: I blended 2 frozen bananas, @ripplefoods pea milk (I had chocolate and plain, so I used some of each), and some massive globs of natural peanut butter.
