Easy Peep Bars - A Sweet Treat For Everyone
Indulge in this decadent gluten-free chocolate pecan tart, featuring a rich chocolate shortbread crust and a luscious pecan pie filling sweetened with maple syrup and coconut sugar. It's the perfect dessert for any occasion, especially for those with gluten sensitivities.
Ingredients: 1 cup almond flour. 1/4 cup cocoa powder. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1 cup pecan halves. 3/4 cup maple syrup. 1/4 cup coconut sugar. 2 tablespoons coconut oil. 3 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Set the oven to 350F 175C and heat it up. Melt the coconut oil and mix it with the maple syrup, vanilla extract, salt, and almond flour in a bowl. This will make the crust dough. In a 9-inch tart pan, press the dough into the bottom and up the sides. After 10 minutes, take the crust out of the oven. For the filling, mix maple syrup, coconut sugar, and coconut oil in a saucepan. Over medium heat, bring to a simmer while stirring all the time. Take it off the heat and let it cool down a bit. Add the eggs, vanilla extract, and salt to a different bowl and mix them together using a whisk. Pour the egg mixture into the warm maple syrup mixture slowly while whisking all the time. Lay the pecan halves out so that they cover the chocolate crust evenly. Spread the filling over the pecans. The filling should be set and a little golden after 30 to 35 minutes in the oven. Wait until it's completely cool to cut and serve.
