That’s why I’m thrilled to share my recipe for Keto Zucchini Halwa with you—a comforting and flavorful Indian Keto Dessert infused with cardamom and delicious dry fruits. The best part? It’s sugar-free and healthy, so you can indulge in its deliciousness without any guilt.
Keto Zucchini Halwa is the perfect dessert for any occasion. Whenever my family craves a decadent treat, I whip up a batch of this delightful halwa. The best part is that it’s a minimum-ingredient, low-labor recipe that won’t take up much of your time.

Ingredients
2 medium-sized zucchini (200 gm or 2 cups)
½ cup heavy coconut cream
1 cup coconut milk
1 tsp cardamom powder
1 tsp ghee/clarified butter
5 sweeteners of your choice
12 almonds & 8 pistachios
Instructions
Take the zucchinis or bottle gourds and peel and cut them into 2. Slice out the seeds from the zucchinis and grate them using a steel grater, and put aside.
Now, take a pan and put that on a gas stove on medium heat. Once the pan is hot, add ghee/clarified butter to that.
After that, add almond and pistachio nuts and fry until golden brown (just over a minute), and then keep aside.
Now in the same pan, add grated zucchini or bottle gourd and cook on low-medium heat for at least 5 minutes.
After that, add milk, heavy whipping cream, crushed fried nuts, and green food coloring, and let it simmer for at least 5 minutes, stirring continuously.
Dish the dessert out and enjoy.

Made a makeshift sort of Tandoori Chicken based on a Ruth Reichl recipe I read and then returned the book so I'm going from memory...So easy and delicious. 4-6 chicken thighs, skin removed. Mix together 1 C full fat organic yogurt (Greek style preferred), 1/4 C fresh mint, 1/4 C fresh cilantro, I tbsp Vindaloo Spice or Curry blend, 1/2 tbsp Pumpkin pie spice (or cinnamon and nutmeg separately), dried or fresh tumeric and ginger if desired, a good amount salt and some black pepper. The spice level is up to you. I like strong flavor so I went for it but tapered the heat for the kids and added more to ours later w hot sauce. Coat chicken heavily in mixture. Line a baking pan w foil or cook on a rack at 500 for 25-30 min til charred a bit. (May set off smoke alarm. 😂) with the bit of left over marinade I pan friend potatoes and tossed them in the yogurt sauce w a generous bit of butter and covered so they steamed as well. Served w sautéed greens (these are Kohlrabi w garlic.) ENJOY the flavor party! #tablerich #easysummermeals
