I made my fav coconut curry for dinner tonight. I was so hungry when I got home from work and this meal is so quick and easy it was the perfect fix. Adding bell peppers and extra ginger to this dish makes it so fresh it’s perfect for a spring meal (even though it’s usually my go to in the fall/ winter). ⠀

Tonight’s dinner was a super quick and easy caesar salad with shrimp. I cooked the shrimp in a pan with lemon, avocado oil, and garlic powder and then tossed them in with a Caesar salad mix I bought at @target. I spent the day outside enjoying the sunshine, and after this fresh meal I’m really feeling all the summer vibes 🌞. ⠀
A delicious summer salad with the sweet taste of ripe tomatoes and plums, the earthy taste of roasted beets, and the creamy texture of feta cheese. This salad is a great side dish for summer meals. It's dressed with a simple balsamic vinaigrette.
Ingredients: 2 large tomatoes, sliced. 2 medium beets, roasted and sliced. 2 plums, sliced. 1/2 cup crumbled feta cheese. 1/4 cup fresh basil leaves, torn. 2 tablespoons extra-virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Put the tomato slices, roasted beet slices, and plum slices on a large serving platter. Diced feta cheese and torn basil leaves and sprinkle them on top of the fruits and vegetables. To make the dressing, mix the olive oil and balsamic vinegar in a small bowl with a whisk. Put it on top of the salad. Add pepper and salt to taste. Toss the salad gently to mix all the ingredients together. Serve right away as a cool summer salad.

The fresh cherry tomatoes, cucumber, and bell pepper in this quinoa salad are mixed in with a zesty citrus vinaigrette. This dish is great for a healthy and filling meal in the spring or summer.
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups water. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1 bell pepper, diced. 1/2 red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled. 1/3 cup olive oil. Juice of 2 lemons. Zest of 1 lemon. 1 tablespoon honey. Salt and pepper to taste.
Instructions: In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. Fluff the quinoa with a fork and let it cool to room temperature. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese. In a small bowl, whisk together olive oil, lemon juice, lemon zest, honey, salt, and pepper to create the citrus vinaigrette. Pour the citrus vinaigrette over the quinoa mixture and toss to combine, ensuring everything is well-coated. Chill the salad in the refrigerator for at least 30 minutes before serving. Garnish with additional parsley and feta cheese before serving. Enjoy this refreshing quinoa salad as a perfect spring and summer meal!
