I wanted to do something different for breakfast so I took my eggs and made egg foo young. The eggs are very light and fluffy and the sauce is delectable. I'm gonna have this much more often. It's very easy to make and it's healthy and delicious 😋 😊 😍 🤗 I think that I need to make some more right now!!!

Returning to something I bolloxed on my first attempt - I think I did much better.
The St. Paul sandwich is actually from St. Louis, and my first attempt at making one months ago was a bomb - it's an egg foo young sandwich and I made a bean sprout omelet. This time, I got it right by deep-frying rather than sauteing the eggs. The crispness is part of what makes this work.
Side note - like New York's "Chopped Cheese" it's a main filling being "Blimpie-ized" - to name it after a bargain sandwich chain from my childhood that served all sandwiches with shredded lettuce, thinly sliced tomato, onions, and other vegetables. Both the St. Paul and Chopped Cheese are standard chain-sandwich-shop fixings applied to something new.
