Ingredients: 1 cup all-purpose flour. 2 eggs. 1 1/2 cups milk. 2 tablespoons melted butter. 1/4 teaspoon salt. 1/4 cup water. 1 cup sliced mushrooms. 1/2 cup heavy cream. 2 tablespoons butter. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a blender, combine the flour, eggs, milk, melted butter, and salt. Blend until smooth. Let the crepe batter rest for 30 minutes. In a non-stick skillet over medium heat, melt a small amount of butter. Pour in a ladleful of crepe batter, swirling to coat the bottom of the skillet evenly. Cook the crepe for about 2 minutes or until the edges start to lift. Flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter. In a separate skillet, melt 2 tablespoons of butter over medium-high heat. Add the sliced mushrooms and saut until they become tender and slightly browned. Reduce the heat to medium-low and pour in the heavy cream. Stir to combine with the mushrooms and simmer for a few minutes until the sauce thickens. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Continue to cook for another 2 minutes, allowing the cheese to melt and the sauce to thicken further. To serve, spoon some of the mushroom cream sauce onto each crepe, then fold or roll the crepe as desired. Garnish with fresh parsley and additional Parmesan cheese if desired.
