A flavorful and easy chicken dish cooked in an electric pressure cooker with fajita seasoning, onions, and bell peppers, resulting in tender and juicy shredded chicken perfect for tacos, burritos, or rice bowls.
Ingredients: 1 lb chicken breasts, boneless and skinless. 1 onion, sliced. 1 bell pepper, sliced. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 packet fajita seasoning mix. 1 cup chicken broth. Salt and pepper to taste.
Instructions: Start the electric pressure cooker and choose the "saut" setting. Put olive oil in the pot and heat it up. Slice the onion and bell pepper and add them to the pot. Saut until the meat is soft. Move the vegetables to the side of the pot and add the chicken breasts. Grill both sides. Add the fajita seasoning mix to the vegetables and chicken. Toss to cover everything. Add chicken broth to the pot. The lid of the pressure cooker needs to be locked in place. Make sure the pressure is high for 10 minutes. After the food is done cooking, let the pressure drop naturally for 5 minutes and then do a quick release. Take the chicken out of the pot and use two forks to shred it. Put the chicken back in the pot and mix it with the vegetables and juices. Add pepper and salt to taste. Put it in tacos, burritos, or rice while it's still hot.
