Fresh cheese is one of the many types of cheese popular in Catalan cuisine. It can be made from either goat, cow, or sheep milk. It has a soft flavour and has lower amount of fat than non-fresh cheese.
There are types of fresh cheese that are not salted and are used for dessert (like mató with honey), while there are others that are salted and are used in savoury meals, eaten on a slice of bread with rubbed tomato or as part of salads, and even alone they're delicious.
