These strawberry cupcakes are a delightful treat for hot summer days. Made with fresh strawberries, they are bursting with fruity flavor and topped with a cloud of whipped cream for a cool and indulgent experience.
Ingredients: 1 cup fresh strawberries, pureed. 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1/2 cup milk. 1 tsp vanilla extract. 1/2 cup diced strawberries for texture. Whipped cream for topping. Fresh strawberry slices for garnish.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the flour, baking powder, and salt together in a bowl with a whisk. Mix the softened butter and sugar in a different bowl until the mixture is light and fluffy. One egg at a time, making sure to mix well after each addition. Add the strawberry puree and vanilla extract and mix well. By adding the dry ingredients one at a time and the milk in between, mix the ingredients together until they are just combined. Add the diced strawberries slowly to give it more texture. Fill each cupcake liner about two thirds of the way to the top with batter. Bake in an oven that has already been heated for 18 to 20 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean. After baking, let the cupcakes cool in the muffin tin for a few minutes. Then, move them to a wire rack to cool completely. Cover each cupcake with a swirl of whipped cream once it's cool, and then add fresh strawberry slices on top. On a hot summer day, serve and enjoy these strawberry cupcakes!
